Happy Mother’s Day!

And the winners of our Mother’s Day contest are….

Best Dessert:

Peanut Butter Pudding Pie

2 boxes of instant vanilla pudding
1 box of graham crackers
1 small tub of cool whip (you may want to buy two for extra when serving)
1 cup of peanut butter
1 can of chocolate icing (heat in microwave for 1 minute until runny)

Mix pudding as directed on box then add the cool-whip and peanut butter set aside. Use a 9 x 11 pan put a layer of graham crackers in bottom then on the sides. Put one layer of pudding on crackers then pour 1/4 the icing (this does not have to cover completely) then a layer of crackers, layer of pudding, layer of icing. Do this until all of the pudding is used then put a final layer of crackers on top and use the last bit of icing to cover the crackers. Refrigerate for at least 8 hours overnight works best then cut and top with more cool-whip.
Eat and enjoy….

Best Brunch/Breakfast Food

Mini Sticky Buns

2 Cans Pillsbury Crescent Rolls (Generic brands works just as well)
5 Tablespoons Butter or Margarine
3/4 Cup Brown Sugar
1/4 Cup Water
1 1/2 Tablespoons Cinnamon
3 Tablespoons Sugar

Melt butter and put in a 9 by 13 cake pan. Mix in brown sugar and water. Unroll crescent rolls and separate into 4 rectangles. Seal perforations. Spread with softened butter. Sprinkle with cinnamon and sugar mixture. Roll up each starting at the short end. Cut each roll into 5 pieces. Place in pan 5 buns by 8 buns. Bake at 350° for 20 to 25 minutes. Flip out on to a cookie sheet as soon as done. Makes 40 delicious mini sticky buns!

Reeses Pieces Popcorn Treats

1/2 c sugar
1/2 c light corn syrup (I use Karo’s)
3 T butter
3 T peanut butter
8 c popcorn, popped
1/2 large bag Reese’s Pieces

Stir sugar, corn syrup, butter and peanut butter in a large saucepan. Bring to a boil. Reduce heat and stir in popcorn until well coated. Remove from heat and stir in Reese’s Pieces. Using a tablespoon, shape mixture into balls and place on waxed paper to cool. Enjoy!

Grilled Peanut Butter and Banana Sandwiches

(Editor’s Note: Maybe it was the simplicity of this recipe, maybe it was the fact that it reminded me of the South - and Elvis - but this children’s favorite with a twist received my highest marks)

2 slices bread
2 dollops peanut butter
1 large banana
1 T butter
* confectioner’s sugar (optional)

Spread peanut butter on one slice of bread. Thinly slice banana and layer onto peanut butter. Top with remaining slice of bread.

In skillet, melt butter. Place sandwich in skillet and brown one side. Flip and brown the other side. Remove from heat. Slice and serve immediately - a glass of milk is recommended.

* For a super sweet addition, sift confectioner’s sugar over the top of the sandwich.

Kids probably cook more on Mother’s Day than any other day. In honor of moms everywhere - and kids that cook - Kids’ Dish is hosting “The Amazing Mother’s Day Dish Contest!”

From now until May 7, I’m inviting children ages 18 and under to submit their favorite Mother’s Day recipes for any the following categories:

  • Brunch/Breakfast Food
  • Tasty Beverage
  • Dessert
  • Snack
  • On Its Own - it doesn’t fit the other categories!
  • The winning entry in each category will be published on Mother’s Day (Sunday, May 13) and the Grand Prize Winner out of all entries in all categories will receive an amazon.com gift certificate for $20. Free money, just like that.

    Here’s more info:

    1. Entries must be posted in the comments below or sent via email by the deadline.

    2. In addition to the recipe, include the following:

  • child’s first name
  • mom’s first name
  • age of the child - no fair giving Mom’s age away!
  • where the you live (city and state or country is sufficient)
  • email address (parent’s email address is okay). I won’t publish your email address, but I do need contact info for the winning entries! And I respect your privacy, I’ll never send you anything that’s not related to your entry in this contest
  • 3. The contest is open to children age 18 and under. Parents or friends can enter on a child’s behalf, so long as you include the required submission information.

    4. If you enter the contest, you agree that I may post any part or all of your submission (your email address excepted) as part of my contest announcements or promotions. All submissions become the property of Kids Dish.

    5. Entry deadline is 11:59p.m. EST on May 7, 2007.

    6. The winning entry will be determined by me, in my sole discretion. Like Judge Judy, my decision is final.

    If you flip through the pages of a number of kids’ magazines, you get the impression that kids’ meals should be Michelin affairs, complete with matching dishware and veggies cut to resemble the works of impressionist painters.

    Let’s be real. Parents don’t have that kind of time. And kids have to eat. The two are not mutually exclusive.

    Kids' dish focuses on healthy, practical meal solutions for kids… and occasionally, that might mean matching dishware.
