Unmotivated
I’ve been feeling unmotivated lately and for the first time since my CSA started in June I found myself with almost all of the previous week’s veggies left the night before the next pickup. It doesn’t help that the tomatoes in my garden finally ripened and I had to pick all of the green beans. It also doesn’t help that Sam’s been in a funk and hasn’t much felt like eating. One more excuse for not cooking anything is that it’s Restaurant Week and we went out to dinner Tuesday night.
So last night I looked in the fridge and saw I still had last week’s green beans, turnips, bok choy, radishes, leeks, radicchio and kale. I also have tomatillos, some yukon gold potatoes, and a couple of peppers from two weeks ago. I also stupidly bought carrots and corn at the farmer’s market last week thinking I’d actually be cooking. I’m a bit overloaded in the produce department, though we are completely devoid of fruit, save for half a watermelon.
Not feeling like cooking and not knowing what else to do I made a stir fry last night. I used the entire bok choy, two ears of corn, and two peppers. If I’d been thinking I would have added the carrots and maybe some green beans two. I almost added the green beans but the stir fry was looking awfully green already, and I don’t have a proper stir fry pan. We don’t have a wok and our 12 inch frying pan was lost in the move two years ago and I never replaced it. I boned some chicken breasts I’d defrosted (thinking I’d cook them bone-in) and threw that in the stir fry as well. At the height of laziness I grabbed a bag of Trader Joe’s precooked rice and threw it in the microwave. I topped everything off with a bottle of stir fry sauce that’s been gathering dust since I bought it two years ago. (Good thing the stuff has an expiration date of 2008!)
It was actually pretty good, though true to picky eater form Sam wouldn’t touch it. Even though he’ll eat rice and vegetables separately he won’t eat them in sauce together so I gave him a bowl of plain rice and some plain corn and figured he’ll eat well another day. Now I have to start feeling like cooking again before the rest of vegetables end up in the compost bin.
