What’s Good for You?
I don’t feel well. I am sitting at my computer, sneezing away with a slight fever. Worse, my almost three-year-old has a snotty nose and a worse mood right now since she doesn’t feel good either. What’s a mom to do? Soup, that’s what!
Chicken Noodle Soup
4 cups chicken stock, home made or store bought (Trader Joes has excellent stock!)
3/4 cup diced onion
3/4 cup diced celery
1 tablespoon minced garlic
4 ounces dried egg noodles, cooked al dente
1 c chopped chicken (optional)
Cook egg noodles until al dente (you can substitute broken spaghetti).
Meanwhile, bring stock to boil over high heat. Add onion, celery, and garlic. Lower heat and simmer for 2 minutes. Add cooked noodles and chicken, if desired, and cook 5 more minutes. Remove from heat and add salt and pepper, to taste.
Mmm. Serve with bread or crackers, or perhaps biscuits!

Wow - so simple! I am always in awe of people who can make soup. Now I can cook, but soups and stews scare me!
