You Say Potato, I Say Yum!

When I was a kid, I used to love baked potato night. My mom had this great idea to put out toppings in bowls, like we were at a potato bar (buffet style eating is very popular in the South!) and then give us all baked potatoes to stuff. There were rules… We must eat the potato (it was not simply a vessel for other stuff). We must stuff the potato with at least one green vegetable. And we had to save cheese for the parents.

Toppings: Try steamed broccoli, shredded cheddar cheese, shredded jack cheese, butter, sour cream, scallions, mushrooms, bacon, diced tomatoes, chives, ground beef (browned)
Preheat the oven to 425 degrees F.
Poke holes in the potato with a fork and then wrap the potato in foil. Set the potatoes directly on the rack in the center of the oven and bake until easily pierced with a fork, about 1 hour.
Remove the foil from the potato. Cut in the center and dig out the potato about 2/3 down. Fluff with a fork. Let the kids stuff until they’re ready to eat.
